The monsoon shelf: what keeps, and what goes with a wet afternoon.
In the hills the rains run from July into September, and the kitchen leans on what keeps: pickles in mustard oil, ground salts, spices and dals stored dry. A wet afternoon is for tea, something fried, and a spoon of achaar.
Damp is the enemy of hill food. Keep loon, spices and flours in airtight jars, use a dry spoon in every pickle, and sun dals for an hour on a clear day if they feel soft.
The season has ended for this year and comes round again in July 2027. The shelves below are open all year.
