About this product

4 favourites from Uttraksh Enterprises's shelf, boxed together for Diwali. Each was picked for what buyers rate, reorder and look at most in the shop.

In the box: • Dal Gahat Horse Gram — दाल गहत — gahat, known outside the hills as horse gram or kulath, is a flat, brown dal grown on rain-fed hill fields in Uttarakhand. • Natural Raw Honey 500gm — कच्चा शहद — raw honey in a 500 g pack, which the shop describes as unprocessed, sold by Uttraksh Enterprises in New Delhi. • Bhangjeera 150g पहाड़ी भंगजीरा (Perilla frutescens) — पहाड़ी भंगजीरा — bhangjeera, the small seed of the perilla plant (Perilla frutescens), grown in the Uttarakhand hills, in a 150 g pack. • Pahadi Hing 20gm — Pahadi Hing 20gm — hing, asafoetida, the strong-smelling resin that Indian kitchens use a pinch at a time.

Every item is the same one Uttraksh Enterprises sells on its own, packed by the shop and sent as one parcel.

About hill honey

What it tastes like

Raw hill honey tastes of the flowers the bees worked, so it changes from jar to jar: mustard honey is mild and sets quickly, while forest honey is darker and stronger, sometimes with a slight bitterness at the end. It is less uniformly sweet than a blended supermarket honey.

How it is used

In hill homes honey goes on roti and into warm milk or tea, and is stirred into curd or over fruit. A spoon of it is often offered with breakfast in the cold months. For tea or milk, let the drink cool a little before adding it so the flavour is not lost.

Keeping it

Keep the lid tight and the jar at room temperature, out of direct sun. Use a dry spoon, since water in the jar is what makes honey ferment. The fridge is not needed and only makes it set faster.

How long it keeps

Sealed raw honey usually keeps for a very long time, though its colour and texture change. The jar's label gives the shop's own best-before date.

Hill honey: common questions

Why has my honey crystallised?

Raw honey sets as its natural sugars crystallise, and it happens faster in cool weather and with some flowers, such as mustard. It is still good. Stand the closed jar in a bowl of warm, not boiling, water and stir until it runs again.

There is foam or a thin layer on top. What is it?

Usually tiny air bubbles and fine wax or pollen that rise in honey that has not been fine-filtered. It is harmless and can be stirred in or skimmed off.

Why is this jar darker than the last one?

Colour follows the flowers in bloom when the honey was gathered. A spring harvest from fruit blossom and a later one from forest flowers from the same hives can look and taste quite different.

Why is this jar runnier or thicker than the last?

Raw honey is not blended to a standard, so thickness varies with the flowers, the season and the weather when it was gathered. A runnier jar is not watered down, and a thick one is often just starting to set.
